Tarragon Simple Syrup

I served a homemade tarragon lemonade during my cooking class and asked my guests to guess what was the main flavoring ingredient. “If you guess, your class is free!” There were different suggestions ranging from licorice to bay leaf, but using tarragon flavor for drinks is so uncommon in the U.S., my bet was safe.

On the contrary, tarragon flavored drinks were and are very popular in Soviet and post-Soviet countries. They are not made with natural ingredients any more and way too sweet, but everybody can recognize the flavor. The most common name for tarragon-flavored carbonated soft drinks in Russian is Tarhun.

“I can’t wait to share this lemonade with my friends!” exclaimed one of my guests. Oh yes, it is wonderful! Very refreshing — just what we need for Texas summer. Tarragon is also known for its health promoting properties. It has been used as herbal medicine for ages. Google for popular and scientific articles about this amazing herb.

Why simple simple? Simple syrup is a sugar solution used by bartenders to make cocktails. The ratio sugar to water is 1:1 to 2:1 by weight. Granulated sugar is stirred into hot water until it is dissolved. To make flavored syrup add herbs, spices, or any other aromatics during the cooking process. Very simple to make!

Store it in a fridge and use for lemonades and cocktails. To make a lemonade, mix 1/4 cup of tarragon syrup with 1 quart of your favorite sparkling water and ice. Add 1-2 tbsp of tarragon flavored simple syrup to your gin-n-tonic, you’ll love it!

  1. Dip tarragon bunches in simmering water for 2 seconds and ice shock to stop cooking. Finely chop tarragon, leaves and stems.
  2. Mix water and sugar, bring to boiling, turn the heat off. That's your simple syrup.
  3. Squeeze key lime juice into the simple syrup and add chopped tarragon. Cover with lid and let it steep for 6-8 hours.
  4. Strain solution. Add 1 drop of green coloring. Bottle and refrigerate.
