Chimmichurri is a sauce originally from Argentina and Uruguay. The main ingredients of typical chimmichurri are oil, water and/or vinegar, parsley, garlic, and other herbs, spices, and vegetables. It’s perfect for grilled meats, but it is also good with so many other foods, including vegetarian — grilled vegetables, fresh goat cheese, fresh mozzarella and burrata, toasted bread, etc. Someone said that when you add fresh herbs chimmichurri to the dish, it feels like you are dining in the middle of an herb garden. So true!
It is one of the easiest sauces to make, no matter what recipe you choose — traditional with parsley or creative with any of your favorite herbs or green vegetables (see Recipe Notes section below for ideas). I still remember one of the best chimmichurries I’ve ever had was made with arugula as the main ingredient. Food processor is not necessary. You can use any other preferred method to finely chop all ingredients.
