Instructions
  1. Clean and trim the beets. Place them into the Instant Pot insert in a steaming basket and add 2 cups of water. Pressure steam them manually for 7 minutes with natural release.
  2. Meanwhile, preheat oven 350F. Spread pecan halves on a baking sheet and toast them for 7 minutes. Let cool to the room temperature.
  3. Meanwhile, make the dressing. Combine all ingredients in a blender jar and process until smooth. Adjust to your taste with salt, pepper, and garlic. You should get about a cup of dressing. Transfer it to a container and keep refrigerated until ready to use.
  4. Let cooked beets cool down to to room temperature. To avoid staining your hands while removing the beets skin, wear disposable gloves. Using your finger tips, rub the skin off. Quarter each beet and transfer them into two containers, one for each variety.
  5. To serve, divide the dressing into 4 equal portions and spread each one on a plate. Arrange the beets and toppings.
