Fast-Cooking Stir-Fries and Sautés

Chicken Breast, Portobello, and Hatch Stirfry

According to my sources, today Central Market receives the last shipment of mild Hatch chili peppers. That’s it for this year. Let’s cook more Hatch while supplies last!

Stir-fries are ultimate quick and easy dinners for working people. The only more time-consuming preparation for this recipe is charring and cleaning Hatch peppers. I do it on weekends, in advance, and add ready-to-use peppers to different dishes during the week. They are also fresh, healthy, and low calorie, if you choose your ingredients with care.

1 chicken breast is about 200g/220k
2 Potobello mushrooms (cleaned) is about 150g/60k
4 Hatch chili peppers (charred and cleaned) are about 145g/60k
1 small onion (peeled and sliced) is about 180g/75k
2 tbsp heavy whipping cream 100k
1 tbsp avocado oil 124k

  1. Hatch peppers are charred in advance, peeled, seeds and stems removed. Slice them 1/4" strips.
  2. Peels and slice onions and garlic.
  3. Using dry paper towel, gently clean the top of the cap. Remove the stem (it's fibrous). Remove the black gills on the underside of the mushroom cap by scraping them with the edge of a spoon.
  4. Slice mushrooms into 1/4" strips.
  5. Slice chicken breast into 1/4" strips. Measure other ingredients and have them ready for cooking.
  6. Heat avocado oil in a heavy-bottomed skillet on high heat till smoking. Sauté onions, garlic, and mushrooms constantly stirring. Season. Let the caramelize slightly.
  7. Add chicken, season it, and continue cooking for another 2-3 minutes, stirring.
  8. Add Hatch chili peppers, continue cooking for another minute, stirring. At the end, add heavy whipping cream, give it the last stir, adjust to your taste and serve!
