Green Chile Facts

One green chile pod has as much vitamin C as 6 oranges. As the chile matures and turns red in fall, the vitamin C count drops and the amount of vitamin A increases due to an increase in carotene. Chiles also contain calcium, phosphorus, iron, potassium, thiamine (b1), riboflavin (b2), niacin (b3), and antioxidant agents.
A 1/2 cup serving of raw green chile peppers contains:

  • 30 calories
  • 181.9 mg of vitamin C, double the daily amount recommended for adults
  • vitamin A, 29% of the recommended amount for men and 38% for women
  • 255 mg of potassium, essential for maintaining fluid balance in and outside of cells
  • iron, 11% of the recommended amount for men and 5% for women
