American Pie: Pizzeria Lola Sunnyside Pizza

Ingredients

Instructions
for dough
  1. Dissolve salt and honey in water. Combine all ingredients and make a slightly sticky, soft, and supple dough. Divide the dough into 2 pieces. Form each into a ball, brush it with some olive oil, and place inside its own zipped freezer bag. Keep for them 15-30 minutes in room temperature, then put in the refrigerator for at least 12 hours. Remove the balls from the refrigerator 2 hours prior to making pizza.

  1. Place baking stone or steel on the rack and preheat oven to 450F. Prepare other ingredients.
  2. Make one pizza at a time. Shape half of the dough on the counter and transfer to the peel dusted with semolina.
  3. Sprinkle the dough with half of grated Pecorino Romano evenly.
  4. Arrange leeks and drizzle them with heavy cream.
  5. Arrange small pieces of bacon on top evenly.

  6. Bake until pizza set, for about 3-4 minutes. Add 2 fresh eggs in the center, and bake for another 2 minutes or until whites are almost set.

  7. Sprinkle with freshly ground pepper. Cut through the egg yolks.

  8. Tilt pizza to let eggs run and slightly set on the surface of hot pizza. Serve hot.
