There are many morels recipes in my collection. All of them are variations of what everybody else makes with morels. Baked Langres stuffed with morels and served with crusty bread and French champagne is my own invention. It is my favorite and the most decadent recipe. It turns an ordinary weekday dinner into fantastic celebration of flavors and textures. Праздник желудка!
It is May 13. Heavy rains. Bumped into a car and lost the logo from the front. Came home late, tired. But survived.
Preheat oven 400F.
Admire Langres. Take pictures. Share them with your hungry friends via Instagram, Facebook, Twitter, whatever. The more, the better Langres tastes.
Carefully cut off the top of the cheese. You need a very sharp utility knife. Scoop the center to make a cavity. Lick your fingers. Take pictures.
Choose the tiniest morels and quickly sauté them on high heat to evaporate extra moisture. Add scooped Langres cheese. Stir it in, let it melt. Pictures! Don't forget to let the world know what you are cooking.
Stuff Langres. Click, click, click! Cover it with the top. Bake for 5 minutes.
Meanwhile, slice the bread and get your brut ready — ice bath, flutes, and all that jazz.
You are allowed to eat your dinner and watch your favorite episode of whatever show you are watching today. Arrange baked Langres and the rest of goodness on a tray. Go sit on your sofa and enjoy your evening!
